The Gilthead Sea Bream (Sparus aurata), is a predatory coastal fish found in estuaries and bays. They are native to Mediterranean Sea and considered the best-tasting of the breams and thus prized in the Mediterranean cuisine. Its specific name, aurata, is inspired from the gold arc marking (similar to a royal gilt) on its forehead. It is of silver color with a black spot at the beginning of the side line above the operculum and a small orange spot below it. It commonly reaches about 35 centimetres in length, but may reach 70 cm  and weigh up to about 7 kilograms. Gilthead Sea Bream is an esteemed ingredient for chefs due to its high quality delicious flesh which is moist with rich, sweet-savory flavour and great nutritional value.
